Operations Underway!

Mmmm... the Moist Chocolate Cake with PB icing from Operation Cake is just about gone (only 3 pieces left). I washed the pan, and then embarked on Operation Citrus Cranberry Loaf (in the oven). It should be highly successful; the last one was. After, it will be Operation Magic Cookie Squares in the pan from Operation Cake. And sometime this week, Operation Rum Cake will be underway, probably before the potluck on Sunday so it can be enjoyed. For that, I've got [info]nessun, [info]sariannastar, [info]hasfartogo, [info]kusanivy, and a woman from Inspiration World to come for dinner. Anyone else change their mind or are interested? Dinner around 5pm.

I cannot make whipped shortbread cookies due to not having a mixer, so I bought icebox cookies from Loblaws. They're tasty.

In case people want them, here's the first two recipes:


Moist Chocolate Cake
1 1/2 c flour
2 c sugar
3/4 c cocoa
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
2 eggs
1 c milk
1/2 c veg oil
2 tsp vanilla
1 c boiling hot water

Oven 350F, 35-40 mins.

Combine dry ingredients in a bowl. Add eggs, milk, oil, vanilla. Beat 2 mins on med (I stir by hand). Stir in water. Batter is thin! Pour into greased 9x13 pan. Cool and ice.

Very tasty with peanut butter icing! I don't use a recipe for that, just mix icing sugar, butter/margarine, milk, and peanut butter.

My mom has made this for years and years, and it's a family favorite for us. It's passed [info]sariannastar's critical baking palate, so it's got to be good!



Citrus Cranberry Loaf
2c flour
1/2 c sugar
1 tbsp baking powder
1/2 tsp salt
rind of 1 orange (or lemon)
2/3 c orange juice
2 eggs, slightly beaten
6 tbsp butter or margarine, melted
1 1/4 c cranberries (or craisins)
1/2 c walnuts (optional)

Oven at 350 degrees F, in a 9x5 pan (loaf pan).
Sift flour (I never sift), sugar, baking powder, salt. Stir in citrus rind. Make well in center, and add OJ, eggs, melted butter/margarine. Stir until blended; do not overmix. Add cranberries and walnuts. Bake 45-50 mins until center comes out clean (I like slightly less, so it's a little more moist). Let cool in pan 10 mins, then transfer to wire rack.

This recipe got raves from my mom as well. It's super yummy and refreshing.

I need to try this "chocolate cake" of which you speak.

This is probably a stupid question on account of I can't bake to save my life - but am I supposed to "cool and ice" the batter or the baked cake?... I suspect I'll laugh at this one later.

LOL I guess I wasn't too clear in my directions; I copied them out from how I wrote it in my notebook to myself, and I know what I mean.

1. Mix batter.
2. Bake cake.
3. Cool cake.
4. Ice cake.

It really is quite tasty, and don't let the runny batter fool you into thinking it won't bake right!

HURRRR... no, that was definitely a me-being-dim not your instructions being unclear :) As I predicted, it's a forehead-slapping moment...
